“Double Chocolate” might not sound like the healthiest of foods, but fear not! These cookies are light and come recommended by our Memorial Hermann dietitians as a heart healthy snack.

Double Chocolate Chip Cookies:
|½ cup whole wheat flour||½ cup Splenda for baking|
|1 ¾ all purpose flour||½ cup Splenda brown sugar for baking|
|½ tsp salt||1 whole egg|
|1 tsp baking soda||2 egg whites|
|1 cup Benecol spread, softened||1 Tbsp vanilla extract|
|½ cup granulated sugar||½ cup unsweetened cocoa powder|
|½ cup packed brown sugar||¾ cup dark chocolate chips|
Preheat of to 375 degrees. In a bowl stir together both flours, salt, and baking soda. In another bowl stir together Benecol spread, both sugars, both Splendas, egg, egg whites, vanilla, and cocoa. Gradually stir flour mixture into Benecol spread mixture until they are combined. Add chocolate chips and stir to distribute evenly. Drop dough by tablespoons onto baking sheets coated with non stick spray and bake about 10 minutes. Cool on a baking rack. Makes approx. 40 cookies.
