Ham & Cheddar Breakfast Strata
|4 slices whole grain bread||1 cup egg substitute|
|1 cup chopped low- sodium ham (approx. 6 oz)||1 cup skim milk|
|½ cup light grated sharp cheddar cheese||½ tsp dry mustard|
|½ cup sliced mushrooms (optional)||Pepper, to taste|
Spray 9×9 inch glass baking pan with non stick spray. Remove crust from bread and layer bread in bottom of casserole. Sprinkle chopped ham, cheese, and (if desired) mushrooms over top of bread. Mix eggs, milk, dry mustard, and pour over mixture. Sprinkle with pepper (recommended white pepper). Bake at 350 degrees for approx 20-30 minutes or until light brown on top and eggs are set. (Casserole is best when assembled the night before, covered, refrigerated and baked in the morning.) Yields approx 4 servings.
