Mushroom & Citrus Spinach Salad:
|2 cups fresh spinach||Green onion to taste, thinly sliced|
|2 cups fresh mushrooms, sliced||2 egg whites boiled and chopped|
|½ grapefruit or 1 orange peeled and sections||Raspberry vinaigrette dressing, light|
In a large bowl, combine spinach, mushrooms, grapefruit or orange sections, onion and egg white. Just before serving, toss with dressing.
