Omega Brownie

 

Why the funny name? The “Omega Brownies” are called this because the walnuts and flaxseed meal are high in Omega 3 fatty acids, which are great for a heart healthy diet. They’re also delicious!

Omega Brownie:

Ingredients:

¼ cup canola oil 1/3 cup cocoa
3 egg whites ¼ tsp baking powder
1 tsp. vanilla ¼ tsp salt
1/3 cup flaxseed meal ½ cup walnuts, chopped
1 cup sugar

Directions:

Preheat oven to 350 degrees.  Mix canola oil, egg whites, and vanilla together thoroughly in a small bowl.  In a large bowl mix flaxseed meal, sugar, cocoa, baking powder, and salt.  Add wet ingredients to sugar mixture and stir well.  Add walnuts, stir to mix in.  Coat an 8×8 baking pan with nonstick cooking spray.  Pour batter into pan and spread evenly.  Bake for 20 minutes, or until a toothpick comes out clean.  Let brownies cool completely before cutting.  Yields 16 brownies.
