Sicilian Lasagna

The Sicilian Lasagna is just as tasty as it looks!  Some consider it to be a little tedious to make, but all it really takes is patience and an hour or two of your time.  Follow our instructions and be proud of yourself for making such a delicious heart healthy meal!

Sicilian Lasagna


Sauce:                                                             Lasagna Filling:

1 tsp extra virgin olive oil 12 pre-cooked lasagna noodles/sheets
1/2  med onion, minced 1 ½ cup fat free cottage cheese
2 cloves garlic, minced 1 cup grated Italian blend cheese (A blend of mozzarella, parmesan, and other cheeses- can be found in the cheese section)
½  tsp crushed red chili flakes (optional) ¼ cup grated skim milk mozzarella cheese
½ lb. ground sirloin (95% lean) Pepper to taste
1 Tbsp dried basil
1 bay leaf
1 28 oz can crushed Italian tomatoes (or 1 can of crushed tomatoes+ 1 tsp of Italian seasoning)



For Sauce:

Heat oil in a large skillet or pot with lid over medium heat.  Sauté onions, garlic, basil, and red chili flakes for 1 to 2 minutes.  Do not let garlic brown.  Add the meat and cook, stirring frequently until no longer pink.  Remove any excess fat (Blot with paper towels or pour the mixture into a colander and let the fat drain.  Return to skillet.)  Add the bay leaf and tomatoes to skillet.  Cover and let simmer until flavors blend, stirring occasionally (about ½ hour).  Remove bay leaf.

For Lasagna:

Heat oven to 350 degrees.

Spray an 8 by 12 inch baking dish with non- stick cooking spray.

Layer 1- 1 cup sauce

Layer 2- 3 noodles, side by side

½ cup cottage cheese, spread evenly over noodles

¼ cup Italian blend cheese, sprinkled evenly over cottage cheese

1 cup sauce, spread over Italian cheeses

Repeat Layer 2 twice in the same order.

To finish, top with: 3 noodles, side by side

1 cup sauce, spread over noodles

¼ cup Italian blend cheese, sprinkled evenly

¼ cup mozzarella cheese, sprinkled evenly

Cover with foil and place in preheated oven.  Bake for 30 minutes.  Remove the cover and continue baking for 15 minutes or until cheese is gold and bubbly.  Remove from oven and let stand for 15 minutes.

To serve, cut into 8 even squares.
