The Texas Tortilla Soup is a delicious heart healthy dish. It is simple to prepare and the ingredients are very easy to find. |1 lb. extra lean ground beef (95/5)||3 soup cans (31 oz) water|
|½ cup chopped onion||1 16 oz frozen kernel corn|
|1 tsp black pepper||1 Tbsp cumin|
|1 14.5 oz can tomatoes with green chilies||2 tbsp fresh cilantro + extra for garnish|
|2 cans (10 ½ oz) beef broth||5 corn tortillas|
|½ avocado||½ cup grated low fat (2%) cheese|
Brown ground beef and onion in a large Dutch oven over medium heat until the beef is no longer pink. Pour the meat into a strainer to allow the fat to drain off. Rinse out the pan to remove the grease from cooking the meat. Place the meat back in the pan and season with pepper. Stir in the tomatoes, broth, water, corn and cumin. Bring the mixture to a boil, cover, reduce heat and simmer 10 minutes. While this simmers, cut the corn tortillas into strips and grate the cheese, and slice the avocado into 10 wedges. After simmering 10 minutes, stir in the cilantro and serve. Makes 10 cups. A serving is 1 cup soup with 1 tbsp grated cheese and ½ of a tortilla. Garnish with avocado and cilantro
