Three Cheese Macaroni Gratin

This macaroni recipe has a great combination of flavors due to the three kinds of cheeses used in the dish.  Putting it in the oven with bread crumbs on top makes it very crispy and delicious.

Three Cheese Macaroni Gratin


1 Tbsp Smart Balance spread (Omega 3 with olive oil) ½ cup grated Parmigiano- Reggiano, or other good quality Parmesan cheese+ 1 tbsp
2 Tbsp flour ½ pound Barilla Plus elbow macaroni
1 cup 1% milk 1/3 cup grated Fontina cheese
1 minced garlic clove 1/3 cup Gruyere cheese
¼ tsp onion powder ¼ cup plain bread crumbs
¼ tsp white pepper ½ tsp low- sodium Creole seasoning
¼ tsp hot sauce


In a medium saucepan, melt the Smart Balance over low heat.  Add 2 Tbsp. of the milk and all the flour.  Cook, stirring constantly for 3 minutes.  Increase the heat to medium and whisk in the rest of the milk little by little.  Cook until thickened, about 5- 6 minutes, stirring frequently.  Remove from the heat, season with the garlic, onion powder, pepper, hot sauce, and ½ cup of the grated Parmesan.  Stir until cheese is melted and sauce is smooth.  Cover and set aside.  Preheat oven to 350 degrees.  Fill a large pot with water and bring to a boil over high heat.  Add the macaroni return to boil and reduce heat to a low boil.   Cook for approx. 5 minutes or until the macaroni is very al dente (slightly undercooked).  Drain in a colander and return the macaroni to the pot.  Add the cheese sauce and stir until well combined.  Lightly spray an 8 x 8 inch baking dish with cooking spray.  In a large bowl combine the remaining cheeses except the 1 Tbsp Parmesan.  Place 1/3 of the macaroni in the bottom of the dish and top with 1/3 of the cheese mixture.  Repeat this procedure with the remaining macaroni and cheese.  In a small bowl, combine the bread crumbs, 1 Tbsp Parmesan, and the Creole seasoning.  Sprinkle this over the top of the macaroni and cheese.  Bake for 25-30 minutes, or until the cheese is bubbly and the top is golden brown.  Remove from the oven and allow to sit for five minutes before serving.  Makes approx. 6 ½ cups.
